The Bread Base is very versatile and you can create almost any gluten free bread type or softdough you desire.

BRIOCHE BUNS
2,000 g Gluten Free Bread Base
20 g Salt
400 g Butter, room temp.
400 g Sugar
400 g Egg
140 g Yeast
1,100 g Water, 40°C
PROCEDURE
Mixing time: 5 min. slow + 3 min. fast
Dough temp: 26°C
Resting time: 10 min. at room temp.
Scaling: 75 g
Proofing time: 80-90 min. (30°C)
Baking temp.: 210°C – 190°C in rack oven
Baking time: 14-16 min.
Steam: 7 sec.
