Tasteful gluten free cinnamon roll based on our gluten free Bread Base. Which gives you the perfect base for softdough with both taste and a nice crumb structure. With the bread base you are ensured an easy and stable process from kneading the dough to a perfect baking performance.
The Bread Base is very versatile and you can create almost any gluten free bread type or softdough you desire.
RECIPE
CINNAMON ROLL
1,000 g Gluten Free Bread Base
10 g Salt
90 g Sugar
5 g Cardamom (optional)
600 g Whole Milk
250 g Vegetable oil
100 g Yeast
240 g Egg
PROCEDURE
Mixing time: 2 min. slow + 5 min. in medium speed
Resting time: 30 min. in the fridge
Scaling: 75-80 g
Proofing time: 75-80 min. (30°C)
Baking temp.: 200°C in rack oven (no steam)
Baking time: 14-16 min.
Resting: Store the dough in a lightly oiled plastic box in the fridge for 30 min. The dough should be pressed into
a flat square.
Shaping: Roll the dough down to approx. 4 mm with a widht of approx. 40 cm. Spread cinnamon filling on the
entire piece. Roll it up and cut into pieces of approx. 3 cm. Bake in silicone molds for a more evenly baking.
