Gluten free cookies with chocolate chunks

Get ready to fall in love with cookies all over again. This recipe for gluten free chocolate chunk cookies are packed with generous pieces of rich, melty chocolate in every bite, nestled in a golden, chewy dough that’s crisp at the edges and soft in the center.

 

Made with our gluten free cake base with carefully selected ingredients, these cookies deliver all the comfort and indulgence of the classic treat - without the gluten.

 

With just one cake base you are ensured an easy and stable process right from mixing the batter to a perfect baking performance. Moreover the cake base is very versatile and you can create almost any gluten free cake, cookie, short pastry or muffin you desire.

 

 

RECIPE

Lemon cake
920 g Gluten Free Cake Base
80 g Brown Sugar
52 g Glucose syrup
175 g Margarine
140 g Egg
250 g Chocolate chuncks

 

PROCEDURE

Mixing time: 2 min. slow + 1 min. at medium speed
with a spatula
Scaling: 75 g
Baking temp.: 165°C in rack oven
Baking time: 13-15 min.


Mix flour, brown sugar, glucose syrup and margarine for 2 min.
at slow speed. Then add eggs and chocolate chunks in the mix
and mix it again for 1 min. at medium speed.


Weight 75 g each. Roll the dough into balls and press them
slightly. If you want a smaller/thicker cookie you can reduce
the amount of brown sugar and replace it with the
Gluten Free Cake Base.
