Gluten free sancwich bread

The gluten free sandwich bread is based on our gluten free Bread Base. Which is the perfect base for baking both bread, baguettes and sandwich bread types with nice bread taste and a fantastic crumb structure. With the bread base you are ensured an easy and stable process from kneading the dough to a perfect baking performance. 

 

The Bread Base is very versatile and you can create almost any gluten free bread type or softdough you desire. Just by adding your desired seeds and kernels.

 

RECIPE

SANDWICH BREAD

1,500 g Gluten Free Bread Base
55 g Pumpkin Seeds
110 g Sunflower Seeds
110 g Linseeds
30 g Vegetable Oil
30 g Salt
55 g Yeast
1,200 g Water, 35°C

 

PROCEDURE

Mixing time: 2 min. slow + 3 min. fast
Dough temp.: 26°C
Scaling size: 7 x 10 cm
Thickness: 1 cm
Proofing time: 75 min.
Baking temp.: 210°C – 200°C in rack oven
Baking time: 15-18 min.
Steam: 7 sec.
