Gluten free soft kernel bread

Our gluten free soft kernel bread has a lovely taste and a perfect slicability. It contains sour dough and various seeds and grains to give the bread a delicious flavour and a moist crumb. The baked soft kernel bread stays fresh for days.

 

This premix can be used for a large variety of tasteful bread - just add shredded carrot into the dough and sprinkle with poppy seeds on top for more variation and delicious ryebread.

 

The dough is very easy to handle and based on a 100% premix where you only have to add yeast and water.

 

RECIPE

SOFT KERNEL BREAD

2,000 g Credin Gluten Free Soft Kernel 
60 g Yeast
1,300 g Water

 

PROCEDURE

Kneading time: 5 minutes at medium speed using a spatula
Dough temp.: 26-28°C
Scaling weight: 350-400 g per bread
Proving time: 40-45 min
Oven temp.: 250°C reduced to 200°C
Steam: Normal at insert
Baking time: 30-35 minutes

Tip: For the sweet tooth you can add dried fruit, nuts or chocolate chunks at the end of the mixing time.
