Dark soft cake with raspberries and crumble

A tasteful vegan soft cake with fresh berries and sweet crumble. The dark vegan soft cake has an intense taste of cocoa and a fantastic moist crumb. CREDI® Cake Vegan Dark blend can be used for a large variety of inspiring soft cakes. You only have to add vegetable oil and water to the blend and you are ensured a uniform batter with a high viscosity. For more variation just add berries, nuts or chocolate chunks to the batter.




1,250 g CREDI® Cake Vegan Dark

300 g Vegetable oil
675 g Water
600 g Forzen raspberries



200 g Sugar
200 g Flour
150 g Pastry margarine 
100 g Rolled oats

8 g Vanilla sugar

Mix all the ingredients to a light crumble using a flat beater.



Mix cake mix, oil and water for 5 minutes on low speed using a flat beater. Scale off the batter at 2,475 g in a tin loaf 46x60 cm and level out the batter. Top the batter with frozen raspberries, almond flakes and vanilla crumble. Bake at 180 °C for approx. 25 minutes the last 5 minutes with an open damper.
