This bakery-fresh treat features a tender, melt-in-your-mouth gluten free cake, generously layered with a short pastry, soft cake and a vibrant mix of juicy berries, topped with a sweet and golden crumble. It is simple to bake as the cake is based on one gluten free cake base.
With the cake base you are ensured an easy and stable process right from mixing the batter to a perfect baking performance. Moreover the base is very versatile and you can create almost any gluten free cake, short pastry or muffin you desire.
RECIPE
Short Pastry
680 g Gluten Free Cake Base
320 g Potato Starch
400 g Pastry Margarine
120 g Egg
Cake Batter
1,000 g Gluten Free Cake Base
290 g Oil
200 g Water
335 g Egg
Add fresh or frozen berries
Crumble
200 g Gluten Free Cake Base
100 g Sugar
50-75 g Margarine
PROCEDURE
Short Pastry
Mixing time: 3-4 min. slow with hook
Mix all the ingredients together at once until combined. Roll out the dough thinly and place it in a pie dish approx. 20 cm in diameter.
Cake Batter
Mixing time: 3-4 min. at medium speed
Scaling: 400 g
Baking temp.: 180°C in rack oven
Baking time: 40-45 min.
Mix flour and oil for 1 min., then add water and eggs. Mix it again for 3-4 min. at medium speed. Add the cake batter into the lined pie dish. Top the cake with berries and crumble.
Crumble
Mix all the ingredients together at once. Be careful not to mix it too much. It should have a rustic look with an irregular texture and a crumbling look.
