Gluten free soft buns

Try our gluten free Soft Dough for creating the perfect soft bun with a mild taste and open crumb. The soft dough is a versatile premix and perfect for both coffee bread, savory snacks, and very tasteful for both sweet as well as salty snacks and rolls.

 

The dough is very easy to handle and has a nice texture, which make it is easy to roll out and to shape into both soft buns and a nice cinnamon roll. 

 

The Soft Dough is a 100% premix, where you only must add sugar, salt, yeast, oil and water. The gluten free softdough is designed and tailormade to industrial production and craft bakeries.

 

RECIPE

SOFT BUNS

250 g Credin Gluten Free Soft Dough
80 g Sugar

10 g Salt

40 g Yeast

40 g Oil

960 g Water

 

PROCEDURE

Kneading time: 2 + 2 min.
Add oil to the dough and knead for 1 min further
Dough temp.: 26-28°C
Scaling weight: 85 g per bun (shape using oil)
Profing time: Approx. 45 min.
Oven temp.: 230-220°C (deck oven)
Steam: Normal at insert
Baking time: Approx. 15 min.
